Ingredients

• 1 ½ cups rolled oats (gluten-free if needed)
• ¾ cup almond flour or whole wheat pastry flour
• ½ cup plain Greek yogurt
• ⅓ cup pure maple syrup or coconut sugar
• ¼ cup melted coconut oil or light butter
• 1 large egg or flax egg
• 1 tsp vanilla extract
• ½ tsp baking soda, ½ tsp ground cinnamon, pinch sea salt
• ⅓ cup dark chocolate chips (70% cacao)
• ⅓ cup toasted pecans or walnuts, chopped
• Optional: 2 tbsp unsweetened shredded coconut for classic cowboy flair


Instructions

• Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
• In a bowl, whisk oats, almond flour, cinnamon, baking soda, and salt until well combined and lump-free.
• In another bowl, mix Greek yogurt, maple syrup, melted coconut oil, egg, and vanilla until smooth and creamy.
• Gently fold wet ingredients into dry until just combined—avoid overmixing for tender, chewy cookies.
• Carefully stir in dark chocolate chips, toasted pecans, and coconut if using for that signature cowboy mix.
• Scoop tablespoon-sized portions onto the baking sheet, flatten slightly with a fork, and bake 10-12 mins until edges are golden and centers are set.
• Cool 5 minutes on pan, then transfer to a rack—enjoy warm or chilled for a hearty, protein-rich, nostalgic treat!
