For the Crust:

  • 1½ cups rolled oats
  • ½ cup almond flour
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • ½ tsp cinnamon
  • ¼ tsp salt

For the Filling:

  • 8 oz light cream cheese, softened
  • ½ cup plain Greek yogurt
  • 1 cup pumpkin puree
  • ¼ cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine oats, almond flour, coconut oil, maple syrup, cinnamon, and salt.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes and let it cool slightly.
  5. In another bowl, beat the cream cheese, Greek yogurt, pumpkin puree, maple syrup, egg, vanilla, pumpkin pie spice, and cinnamon until smooth.
  6. Pour the filling over the baked crust and spread evenly.
  7. Bake for 30–35 minutes, or until the center is just set.
  8. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
