For the Crust:
- 1½ cups rolled oats
- ½ cup almond flour
- 2 tbsp coconut oil, melted
- 2 tbsp maple syrup
- ½ tsp cinnamon
- ¼ tsp salt
For the Filling:
- 8 oz light cream cheese, softened
- ½ cup plain Greek yogurt
- 1 cup pumpkin puree
- ¼ cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- ½ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine oats, almond flour, coconut oil, maple syrup, cinnamon, and salt.
- Press the mixture firmly into the bottom of the prepared pan.
- Bake the crust for 10 minutes and let it cool slightly.
- In another bowl, beat the cream cheese, Greek yogurt, pumpkin puree, maple syrup, egg, vanilla, pumpkin pie spice, and cinnamon until smooth.
- Pour the filling over the baked crust and spread evenly.
- Bake for 30–35 minutes, or until the center is just set.
- Cool completely, then refrigerate for at least 2 hours before slicing into bars.
