For the Cookies:
- 1½ cups whole wheat pastry flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp pumpkin pie spice
- ½ tsp ground cinnamon
- ¼ tsp sea salt
- ½ cup pumpkin puree
- ⅓ cup maple syrup
- ¼ cup coconut oil, melted
- ¼ cup plain Greek yogurt
- 1 large egg
- 1 tsp vanilla extract
For the Streusel:
- ¼ cup rolled oats
- 2 tbsp whole wheat flour
- 2 tbsp coconut sugar
- 2 tbsp chopped pecans
- 2 tbsp coconut oil, melted
- ½ tsp ground cinnamon
Optional Glaze:
- ¼ cup plain Greek yogurt
- 1 tbsp maple syrup
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- In another bowl, whisk together the pumpkin puree, maple syrup, coconut oil, Greek yogurt, egg, and vanilla.
- Stir the wet ingredients into the dry ingredients until just combined.
- Scoop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
- In a small bowl, combine the streusel ingredients until crumbly, then sprinkle over each cookie.
- Bake for 12–15 minutes, or until the cookies are lightly golden and set.
- Cool completely before drizzling with the optional glaze.
