  • 2 cups pumpkin puree
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt

Crumble Topping:

 

  • 3/4 cup rolled oats
  • 1/3 cup almond flour
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a bowl, whisk pumpkin puree, eggs, maple syrup, almond milk, vanilla, and spices until smooth.
  3. Pour mixture into the baking dish and spread evenly.
  4. In another bowl, mix oats, almond flour, coconut oil, maple syrup, cinnamon, and salt to form a crumbly topping.
  5. Sprinkle crumble evenly over the pumpkin layer.
  6. Bake for 35–40 minutes until set and golden on top.
  7. Let cool slightly before serving.
