- 2 cups pumpkin puree
- 2 large eggs

Crumble Topping:
- 3/4 cup rolled oats
- 1/3 cup almond flour
- 3 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- In a bowl, whisk pumpkin puree, eggs, maple syrup, almond milk, vanilla, and spices until smooth.
- Pour mixture into the baking dish and spread evenly.
- In another bowl, mix oats, almond flour, coconut oil, maple syrup, cinnamon, and salt to form a crumbly topping.
- Sprinkle crumble evenly over the pumpkin layer.
- Bake for 35–40 minutes until set and golden on top.
- Let cool slightly before serving.
