Ingredients

  • 1 cup whole wheat flour
  • ½ cup rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger
  • ¼ tsp salt
  • ¾ cup pumpkin puree
  • 1 cup unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (for cooking)

Instructions

  1. In a bowl, whisk flour, oats, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  2. In another bowl, mix pumpkin puree, almond milk, maple syrup, egg, and vanilla extract.
  3. Combine wet and dry ingredients until just mixed (do not overmix).
  4. Heat a nonstick pan over medium heat and lightly grease with coconut oil.
  5. Pour batter into small rounds and cook until bubbles form on top.
  6. Flip and cook until golden brown on both sides.
  7. Serve warm with a drizzle of maple syrup or fresh fruit.
