- 1 cup whole wheat flour
- ½ cup rolled oats
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger
- ¼ tsp salt
- ¾ cup pumpkin puree
- 1 cup unsweetened almond milk
- 2 tbsp maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp coconut oil (for cooking)
Instructions
- In a bowl, whisk flour, oats, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In another bowl, mix pumpkin puree, almond milk, maple syrup, egg, and vanilla extract.
- Combine wet and dry ingredients until just mixed (do not overmix).
- Heat a nonstick pan over medium heat and lightly grease with coconut oil.
- Pour batter into small rounds and cook until bubbles form on top.
- Flip and cook until golden brown on both sides.
- Serve warm with a drizzle of maple syrup or fresh fruit.
