- 4 cups brown rice cereal
- ¼ cup pumpkin puree
- ¼ cup almond butter
- ¼ cup maple syrup
- 2 tbsp coconut oil
- 1 tsp pumpkin pie spice
- ½ tsp cinnamon
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Line an 8×8-inch baking pan with parchment paper.
- In a saucepan over low heat, combine the almond butter, maple syrup, coconut oil, pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt.
- Stir until smooth and well combined.
- Remove from the heat and gently fold in the brown rice cereal until evenly coated.
- Transfer the mixture to the prepared pan and press down firmly with a spatula or lightly greased hands.
- Refrigerate for 1 hour, or until firm.
- Cut into 12 squares and serve.
