  • 4 cups brown rice cereal
  • ¼ cup pumpkin puree
  • ¼ cup almond butter
  • ¼ cup maple syrup
  • 2 tbsp coconut oil
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a saucepan over low heat, combine the almond butter, maple syrup, coconut oil, pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt.
  3. Stir until smooth and well combined.
  4. Remove from the heat and gently fold in the brown rice cereal until evenly coated.
  5. Transfer the mixture to the prepared pan and press down firmly with a spatula or lightly greased hands.
  6. Refrigerate for 1 hour, or until firm.
  7. Cut into 12 squares and serve.
