Deliciously Decadent Pumpkin Brownies: Fudgy, Swirled, and Perfect for Fall

  • 1 cup whole wheat flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup pumpkin puree
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp pumpkin pie spice
  • 2 tbsp unsweetened almond milk
  • ¼ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, salt, cinnamon, and pumpkin pie spice.
  3. In another bowl, mix eggs, pumpkin puree, maple syrup, coconut oil, vanilla, and almond milk until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in chocolate chips if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 20–25 minutes, until set but still fudgy in the center.
  8. Cool completely before slicing.
