- 1 cup whole wheat flour
- ½ cup cocoa powder
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ½ cup pumpkin puree
- ⅓ cup maple syrup
- ¼ cup coconut oil, melted
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp pumpkin pie spice
- 2 tbsp unsweetened almond milk
- ¼ cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, salt, cinnamon, and pumpkin pie spice.
- In another bowl, mix eggs, pumpkin puree, maple syrup, coconut oil, vanilla, and almond milk until smooth.
- Combine wet and dry ingredients until just mixed.
- Fold in chocolate chips if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 20–25 minutes, until set but still fudgy in the center.
- Cool completely before slicing.
