  • 1 cup 100% fruit juice (strawberry, orange, or mixed berry)
  • ½ cup fresh strawberries, blended
  • 2 tbsp maple syrup
  • 2 tbsp fresh lemon juice
  • 3 tbsp unflavored gelatin
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a small saucepan, combine the fruit juice, blended strawberries, maple syrup, and lemon juice over low heat.
  2. Gradually whisk in the gelatin until completely dissolved.
  3. Stir continuously for 3–5 minutes, making sure the mixture does not boil.
  4. Remove from the heat and stir in the vanilla extract, if using.
  5. Carefully pour the mixture into silicone gummy molds or a small parchment-lined dish.
  6. Refrigerate for at least 2 hours, or until fully set.
  7. Remove the gummies from the molds and store them in an airtight container in the refrigerator for up to one week.
