- 1 cup 100% fruit juice (strawberry, orange, or mixed berry)
- ½ cup fresh strawberries, blended
- 2 tbsp maple syrup
- 2 tbsp fresh lemon juice
- 3 tbsp unflavored gelatin
- 1 tsp vanilla extract (optional)
Instructions
- In a small saucepan, combine the fruit juice, blended strawberries, maple syrup, and lemon juice over low heat.
- Gradually whisk in the gelatin until completely dissolved.
- Stir continuously for 3–5 minutes, making sure the mixture does not boil.
- Remove from the heat and stir in the vanilla extract, if using.
- Carefully pour the mixture into silicone gummy molds or a small parchment-lined dish.
- Refrigerate for at least 2 hours, or until fully set.
- Remove the gummies from the molds and store them in an airtight container in the refrigerator for up to one week.
