- 1½ cups pumpkin puree
- 2 large eggs
- ½ cup Greek yogurt
- ¼ cup maple syrup
- 1 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp pumpkin pie spice
- ¼ tsp nutmeg
- 2 tbsp coconut flour
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish or ramekins.
- In a large bowl, whisk together pumpkin puree, eggs, Greek yogurt, maple syrup, almond milk, and vanilla until smooth.
- Add cinnamon, pumpkin pie spice, nutmeg, coconut flour, and salt. Mix until fully combined.
- Pour the mixture into the prepared baking dish or ramekins.
- Bake for 35–40 minutes, or until the center is set but slightly jiggly.
- Let cool for 10–15 minutes before serving.
- Serve warm or chilled, optionally topped with a sprinkle of cinnamon.
