  • ¼ cup maple syrup
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp nutmeg
  • 2 tbsp coconut flour
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish or ramekins.
  2. In a large bowl, whisk together pumpkin puree, eggs, Greek yogurt, maple syrup, almond milk, and vanilla until smooth.
  3. Add cinnamon, pumpkin pie spice, nutmeg, coconut flour, and salt. Mix until fully combined.
  4. Pour the mixture into the prepared baking dish or ramekins.
  5. Bake for 35–40 minutes, or until the center is set but slightly jiggly.
  6. Let cool for 10–15 minutes before serving.
  7. Serve warm or chilled, optionally topped with a sprinkle of cinnamon.
