  • 1½ cups whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp sea salt
  • 4 oz light cream cheese, softened
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Topping:

  • 1 tbsp coconut sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, beat the cream cheese until smooth.
  4. Add the maple syrup, coconut oil, egg, and vanilla extract, mixing until well combined.
  5. Gradually stir the wet ingredients into the dry ingredients until a soft dough forms.
  6. In a small bowl, mix the coconut sugar and cinnamon for the topping.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet and lightly flatten them.
  8. Sprinkle the cinnamon topping evenly over each cookie.
  9. Bake for 10–12 minutes, or until the edges are lightly golden.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
