- 4 oz light cream cheese, softened
- ⅓ cup maple syrup
- ¼ cup coconut oil, melted
- 1 large egg
- 1 tsp vanilla extract
Cinnamon Topping:
- 1 tbsp coconut sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, beat the cream cheese until smooth.
- Add the maple syrup, coconut oil, egg, and vanilla extract, mixing until well combined.
- Gradually stir the wet ingredients into the dry ingredients until a soft dough forms.
- In a small bowl, mix the coconut sugar and cinnamon for the topping.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet and lightly flatten them.
- Sprinkle the cinnamon topping evenly over each cookie.
- Bake for 10–12 minutes, or until the edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
