Churro dough:

  • ½ cup water
  • 2 tbsp unsalted butter or coconut oil
  • 1 tbsp granulated sweetener (monk fruit blend—you love blood sugar friendly!)
  • ¼ tsp salt
  • ½ cup all-purpose flour (or ½ cup almond flour + 1 tbsp coconut flour for GF/low-carb)
  • 1 large egg

Cinnamon-sugar coating:

  • 3 tbsp granulated sweetener (monk fruit blend)
  • 1½ tsp ground cinnamon
  • 1 tbsp melted butter or coconut oil (for tossing—you love buttery richness!)

  • Sugar-free chocolate sauce or caramel dip

Instructions

1. Make dough:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. In a small saucepan, bring water, butter, sweetener, and salt to a boil.
  3. Remove from heat; stir in flour until smooth ball forms.
  4. Let cool 2 minutes; beat in egg until glossy and thick.

2. Shape bites:

Scoop 1-tsp portions; roll into balls (damp hands help). Place on baking sheet 1″ apart.

3. Bake:

Bake 12–15 minutes until puffed and golden. Cool 2 minutes.

4. Coat & serve:

Toss warm bites in melted butter, then in cinnamon-sugar mix. Serve immediately with optional dip.
