Glaze:
- ½ cup plain Greek yogurt
- 1 tbsp maple syrup
- ½ tsp vanilla extract
Topping:
- 2 tbsp natural festive sprinkles
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, whisk the eggs, maple syrup, coconut oil, Greek yogurt, vanilla, and almond extract until smooth.
- Gradually stir the wet ingredients into the dry ingredients until a soft dough forms.
- Roll tablespoon-sized portions into balls and place them on the prepared baking sheet.
- Bake for 10–12 minutes, or until the bottoms are lightly golden.
- Let the cookies cool completely on a wire rack.
- Mix the glaze ingredients until smooth, then drizzle or spread over the cooled cookies.
- Decorate with festive sprinkles before the glaze sets.
