  • 2 large eggs
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • ¼ cup plain Greek yogurt
  • 1 tsp vanilla extract
  • ½ tsp almond extract

Glaze:

  • ½ cup plain Greek yogurt
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract

Topping:

  • 2 tbsp natural festive sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, maple syrup, coconut oil, Greek yogurt, vanilla, and almond extract until smooth.
  4. Gradually stir the wet ingredients into the dry ingredients until a soft dough forms.
  5. Roll tablespoon-sized portions into balls and place them on the prepared baking sheet.
  6. Bake for 10–12 minutes, or until the bottoms are lightly golden.
  7. Let the cookies cool completely on a wire rack.
  8. Mix the glaze ingredients until smooth, then drizzle or spread over the cooled cookies.
  9. Decorate with festive sprinkles before the glaze sets.
