- 2 cups whole wheat pastry flour
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp sea salt
- 2 large eggs
- ½ cup plain Greek yogurt
- ⅓ cup maple syrup
- ¼ cup melted coconut oil
- ½ cup unsweetened milk of choice
- 1 tsp vanilla extract
- ⅓ cup naturally colored rainbow sprinkles
Optional Vanilla Glaze:
- ¼ cup plain Greek yogurt
- 1 tbsp maple syrup
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, Greek yogurt, maple syrup, coconut oil, milk, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the rainbow sprinkles, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
- Drizzle with the optional vanilla glaze and decorate with extra sprinkles before serving, if desired.
