Almond flour crust (optional but delicious!):

  • 3 tbsp melted butter or coconut oil
  • 2 tbsp granulated monk fruit sweetener
  • Pinch of salt (use reduced-sodium—you love low-sodium!)

Vanilla funfetti filling:

  • 8 oz (1 block) full-fat cream cheese, softened (you love cream cheese—memory #11!)
  • 1 cup heavy whipping cream, cold
  • ¾ cup powdered monk fruit sweetener
  • 2 tsp pure vanilla extract (you love real vanilla!)
  • Pinch of salt
  • Optional: 2–3 tbsp sugar-free rainbow “sprinkles” or finely chopped sugar-free candy melts (for confetti swirls!)

Sugar-free “sprinkle” alternatives (if store-bought unavailable!):

Instructions

1. Make crust (optional):
In a bowl, mix almond flour, melted butter, sweetener, and salt until crumbly.
Press firmly into 9×9″ parchment-lined pan.
Chill 15 minutes to set (no-bake) OR bake at 350°F (175°C) for 10 minutes; cool completely.
2. Whip filling:
In a large bowl, beat softened cream cheese and powdered sweetener until smooth and fluffy.
Add vanilla and salt; mix until combined.
In separate bowl, whip cold heavy cream to stiff peaks.
Gently fold whipped cream into cream cheese mixture until light and airy.
3. Add confetti swirl:
Fold in sugar-free “sprinkles” or berry powder gently—don’t overmix to keep colors vibrant!
For marbled effect: Reserve ½ cup plain filling; tint remaining with natural food coloring. Alternate spoonfuls in pan; swirl gently with knife.
4. Assemble & chill:
Spread filling evenly over chilled crust (or directly into pan for crustless version).
