- 1½ cups whole wheat pastry flour
- 2 tsp baking powder
- ¼ tsp sea salt
- 1 tsp ground cinnamon
- 2 large eggs
- ¾ cup unsweetened almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp coconut oil, melted
- Avocado oil, for frying
Optional Topping:
- 2 tbsp powdered monk fruit sweetener
- ½ tsp ground cinnamon
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a separate bowl, whisk the eggs, almond milk, maple syrup, vanilla, and melted coconut oil.
- Gradually stir the wet ingredients into the dry ingredients until smooth.
- Heat about 2 inches of avocado oil in a deep skillet or saucepan to 350°F (175°C).
- Drop tablespoon-sized portions of batter into the hot oil.
- Fry for 1–2 minutes per side until puffed and golden brown.
- Remove with a slotted spoon and place on a paper towel-lined plate.
- Sprinkle with the powdered monk fruit sweetener and cinnamon while still warm.
- Serve immediately.
