Ingredients

  • 1½ cups whole wheat pastry flour
  • 2 tsp baking powder
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • ¾ cup unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil, melted
  • Avocado oil, for frying

Optional Topping:

  • 2 tbsp powdered monk fruit sweetener
  • ½ tsp ground cinnamon

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
  2. In a separate bowl, whisk the eggs, almond milk, maple syrup, vanilla, and melted coconut oil.
  3. Gradually stir the wet ingredients into the dry ingredients until smooth.
  4. Heat about 2 inches of avocado oil in a deep skillet or saucepan to 350°F (175°C).
  5. Drop tablespoon-sized portions of batter into the hot oil.
  6. Fry for 1–2 minutes per side until puffed and golden brown.
  7. Remove with a slotted spoon and place on a paper towel-lined plate.
  8. Sprinkle with the powdered monk fruit sweetener and cinnamon while still warm.
  9. Serve immediately.
