- 1½ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- 1 tbsp maple syrup
- 2 tbsp coconut sugar
- 2 large eggs
- ¾ cup milk of choice
- 1 tsp vanilla extract
- 2 tbsp melted coconut oil
- Avocado oil, for frying
Cinnamon Coating:
- 2 tbsp powdered monk fruit sweetener
- 1 tsp ground cinnamon
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, whisk the maple syrup, coconut sugar, eggs, milk, vanilla, and melted coconut oil until smooth.
- Gradually stir the wet ingredients into the dry ingredients until no lumps remain.
- Heat about 2 inches of avocado oil in a deep skillet or saucepan to 350°F (175°C).
- Carefully drop tablespoon-sized portions of batter into the hot oil.
- Fry for 1–2 minutes per side, turning once, until golden brown.
- Remove with a slotted spoon and drain on a paper towel-lined plate.
- Mix the powdered monk fruit sweetener with the cinnamon and lightly coat the warm bites.
- Serve immediately with fresh berries or your favorite dipping sauce, if desired.
