Ingredients

  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp maple syrup
  • 2 tbsp coconut sugar
  • 2 large eggs
  • ¾ cup milk of choice
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil
  • Avocado oil, for frying

Cinnamon Coating:

  • 2 tbsp powdered monk fruit sweetener
  • 1 tsp ground cinnamon

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, whisk the maple syrup, coconut sugar, eggs, milk, vanilla, and melted coconut oil until smooth.
  3. Gradually stir the wet ingredients into the dry ingredients until no lumps remain.
  4. Heat about 2 inches of avocado oil in a deep skillet or saucepan to 350°F (175°C).
  5. Carefully drop tablespoon-sized portions of batter into the hot oil.
  6. Fry for 1–2 minutes per side, turning once, until golden brown.
  7. Remove with a slotted spoon and drain on a paper towel-lined plate.
  8. Mix the powdered monk fruit sweetener with the cinnamon and lightly coat the warm bites.
  9. Serve immediately with fresh berries or your favorite dipping sauce, if desired.
