For the Cake:

  • 1½ cups whole wheat flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • ½ cup plain Greek yogurt
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ cup chopped pecans
  • ¼ cup dark chocolate chips (optional)

Optional Chocolate Glaze:

  • ¼ cup dark chocolate chips
  • 2 tbsp unsweetened almond milk
  • 1 tsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, maple syrup, coconut oil, Greek yogurt, almond milk, and vanilla until smooth.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the pecans and chocolate chips, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  8. If making the glaze, melt the chocolate chips with almond milk and coconut oil until smooth.
  9. Let the cake cool completely before drizzling with the chocolate glaze.
  10. Slice and serve.
