For the Cake:
- 1½ cups whole wheat flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ⅓ cup maple syrup
- ¼ cup coconut oil, melted
- ½ cup plain Greek yogurt
- ½ cup unsweetened almond milk
- 1 tsp vanilla extract
- ½ cup chopped pecans
- ¼ cup dark chocolate chips (optional)
Optional Chocolate Glaze:
- ¼ cup dark chocolate chips
- 2 tbsp unsweetened almond milk
- 1 tsp coconut oil
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, maple syrup, coconut oil, Greek yogurt, almond milk, and vanilla until smooth.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in the pecans and chocolate chips, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- If making the glaze, melt the chocolate chips with almond milk and coconut oil until smooth.
- Let the cake cool completely before drizzling with the chocolate glaze.
- Slice and serve.
