Hawaiian Carrot Pineapple Cake: The Ultimate Moist Tropical Dessert

Ingredients

  • 1½ cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 2 large eggs
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 cup finely grated carrots
  • ¾ cup crushed pineapple, drained
  • 1 tsp vanilla extract
  • ¼ cup unsweetened almond milk

 

  • ¼ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix eggs, maple syrup, coconut oil, vanilla, and almond milk.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in carrots, pineapple, and walnuts if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 30–35 minutes, or until a toothpick comes out clean.
  8. Cool completely before slicing.
