Ingredients

  • 1 cup whole wheat flour
  • ½ cup almond flour
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp salt
  • ½ cup pumpkin puree
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened almond milk

Cinnamon Coating:

  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tbsp coconut oil, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together whole wheat flour, almond flour, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. In another bowl, mix pumpkin puree, maple syrup, coconut oil, vanilla, and almond milk.
  4. Combine wet and dry ingredients until a soft dough forms.
  5. Roll dough into small bite-sized balls and place on baking sheet.
  6. Bake for 12–15 minutes until lightly golden.
  7. Mix cinnamon and coconut sugar in a bowl.
  8. Brush warm bites with melted coconut oil.
  9. Toss in cinnamon sugar mixture until fully coated.
  10. Serve warm and enjoy.
