- 1 tsp vanilla extract
Whipped topping:
- 1½ cups heavy whipping cream, cold

- Optional: ½ tsp lemon zest

Instructions
1. Make crust:
- Crush GF chocolate cookies into fine crumbs (food processor or bag + rolling pin).
- Mix with melted butter and optional sweetener. Press firmly into bottom of 9×13″ dish. Chill 10 min.
2. Make lemon layer:
Beat cream cheese, powdered sweetener, lemon zest, lemon juice, and vanilla until smooth and fluffy (~3 min). Spread evenly over crust.
3. Whip topping:
In a cold bowl, beat heavy cream and sweetener until stiff peaks form. Fold in lemon zest (if using). Spread gently over lemon layer.
4. Chill & serve:
