  • ½ cup powdered monk fruit sweetener
  • Zest of 2 lemons (about 2 tbsp—you love citrus!)
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract

Whipped topping:

  • 1½ cups heavy whipping cream, cold
  • 2 tbsp powdered monk fruit sweetener
  • Optional: ½ tsp lemon zest

Garnish:

  • Extra cookie crumbs
  • Lemon slices or zest
  • Fresh berries (you love berries!)

Instructions

1. Make crust:

  1. Crush GF chocolate cookies into fine crumbs (food processor or bag + rolling pin).
  2. Mix with melted butter and optional sweetener. Press firmly into bottom of 9×13″ dish. Chill 10 min.

2. Make lemon layer:

Beat cream cheese, powdered sweetener, lemon zest, lemon juice, and vanilla until smooth and fluffy (~3 min). Spread evenly over crust.

3. Whip topping:

In a cold bowl, beat heavy cream and sweetener until stiff peaks form. Fold in lemon zest (if using). Spread gently over lemon layer.

4. Chill & serve:

Refrigerate at least 4 hours (or overnight). Garnish with cookie crumbs, lemon, and berries before serving.
