Hummingbird Bread with Cinnamon Cream Cheese Frosting: Ultra Moist Southern-Inspired Delight

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup crushed pineapple (drained)
  • 2 large eggs
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt

Cinnamon Cream Cheese Frosting:

 

  • 8 oz cream cheese, softened
  • 2 tbsp coconut oil or butter, softened
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix mashed bananas, crushed pineapple, eggs, coconut oil, maple syrup, and vanilla.
  3. In another bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
  4. Stir dry ingredients into wet ingredients until just combined.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick comes out clean.
  7. Let bread cool completely before frosting.
  8. Beat cream cheese, coconut oil, maple syrup, vanilla, and cinnamon until smooth and fluffy.
  9. Spread frosting over cooled bread and slice to serve.
