- 2 ripe bananas, mashed
- 1 cup crushed pineapple (drained)
- 2 large eggs
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 3/4 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Cinnamon Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 2 tbsp coconut oil or butter, softened
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix mashed bananas, crushed pineapple, eggs, coconut oil, maple syrup, and vanilla.
- In another bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
- Stir dry ingredients into wet ingredients until just combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick comes out clean.
- Let bread cool completely before frosting.
- Beat cream cheese, coconut oil, maple syrup, vanilla, and cinnamon until smooth and fluffy.
- Spread frosting over cooled bread and slice to serve.
