Ingredients

• 2 cups whole wheat pastry flour or almond flour blend
• 1 ½ cups fresh apples, diced (about 2 medium)
• ½ cup pure maple syrup or honey
• ½ cup plain Greek yogurt
• ¼ cup melted coconut oil or light butter
• 2 large eggs or flax eggs
• 1 tsp vanilla extract
• 1 tsp baking soda, ½ tsp baking powder
• 1 ½ tsp ground cinnamon, ¼ tsp nutmeg
• Pinch of sea salt
• ½ cup toasted pecans, chopped
• Glaze: ¼ cup Greek yogurt + 2 tbsp maple syrup + ½ tsp vanilla + pinch cinnamon


Instructions

• Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper for easy removal.
• Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a bowl until well combined.
• In another bowl, mix maple syrup, Greek yogurt, melted coconut oil, eggs, and vanilla until smooth and creamy.
• Gently fold wet ingredients into dry until just combined; carefully stir in diced apples and toasted pecans.
• Pour batter into prepared pan, smooth the top, and bake 28-32 mins until golden and a toothpick comes out clean.
• Cool completely, then whisk glaze ingredients until smooth; drizzle over cake, slice, and enjoy this wholesome, spiced delight!
