- 1 cup granulated sugar
- 6 tbsp unsalted butter, cut into pieces
- 1/2 cup heavy cream (room temperature)
- 1 tsp vanilla extract
- 1/4 tsp salt (optional, for salted caramel)
Instructions
- Heat sugar in a heavy saucepan over medium heat, stirring constantly until it melts and turns amber in color.
- Add butter carefully and whisk until fully melted and combined.
- Slowly pour in heavy cream while whisking continuously (mixture will bubble).
- Cook for 1–2 more minutes until smooth and slightly thickened.
- Remove from heat and stir in vanilla and salt.
- Let cool before using; caramel will thicken as it cools.
- Store in a sealed jar in the refrigerator.
