Ingredients

  • 🍠 1 cup mashed sweet potato
  • 🧈 1 cup butter, softened
  • 🍚 1½ cups granulated sugar
  • 🥚 4 large eggs
  • 🌿 1 tsp vanilla extract
  • 🌾 2½ cups all-purpose flour
  • 🥄 2 tsp baking powder
  • 🍂 1 tsp ground cinnamon
  • 🧂 ½ tsp salt

🥜 Pecan Caramel Glaze:

 

  • 🍯 ½ cup caramel sauce
  • 🧈 2 tbsp butter
  • 🥛 2 tbsp heavy cream
  • 🌰 ½ cup chopped pecans
  • 🧂 Pinch of flaky sea salt (optional)

Instructions

  1. 🔥 Preheat oven to 350°F (175°C) and grease a loaf or Bundt pan.
  2. 🥣 Cream the butter and sugar until fluffy. Beat in the eggs one at a time, then mix in the sweet potato and vanilla.
  3. 🌾 Stir in the flour, baking powder, cinnamon, and salt until just combined.
  4. 🍰 Pour the batter into the prepared pan and bake for 50–60 minutes, until a toothpick comes out clean.
  5. 🍯 Warm the caramel sauce with the butter and heavy cream, then stir in the pecans.
  6. ❄️ Let the cake cool slightly before pouring the warm pecan caramel glaze over the top.
