  • Author: WAFA LI

Ingredients

Scale
(Serves 8–10)

Yogurt base:

  • 2 cups plain Greek yogurt (full-fat or 2%—you love high-protein!)
  • ¼ cup powdered sweetener (powdered erythritol or monk fruit blend—you love blood sugar friendly!)
  • Zest of 2 limes (you love citrus!)
  • 3 tbsp fresh lime juice (about 23 key limes or Persian limes)
  • Optional: ½ tsp vanilla extract

Mix-ins & topping:

  • ¼ cup graham cracker crumbs (or almond flour + 1 tbsp sweetener for GF/low-carb—you love this!)
  • Optional: 2 tbsp chopped pistachios or shredded coconut

Instructions

1. Mix yogurt base:

In a bowl, whisk Greek yogurt, powdered sweetener, lime zest, lime juice, and vanilla (if using) until smooth and creamy.

2. Spread & top:

  1. Line a baking sheet (9×13″ or similar) with parchment.
  2. Pour yogurt mixture onto sheet; spread evenly into a ½” thick rectangle.
  3. Sprinkle graham crumbs (or almond flour mix) and optional pistachios/coconut over top. Gently press in.

3. Freeze:

Freeze at least 4 hours (or overnight) until solid.

4. Break & serve:

Lift bark off parchment; break into rustic shards. Store frozen.
💡 Pro Tips for Perfection:
Use full-fat Greek yogurt—lower-fat versions may ice up.
Roll limes before juicing—yields more juice!
