Ingredients
For the crust:
• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• ¼ cup granulated sugar
• ½ cup (1 stick) cold butter, cubed (or coconut oil)
For the filling:
• 3 large eggs
• ¾ cup brown sugar
• ¼ cup maple syrup or corn syrup
• 2 tbsp melted butter or coconut oil
• 1 tsp vanilla extract
• ¼ tsp salt
• 1 ½ cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper or grease well.
- Make the crust: In a food processor or bowl, mix flour and sugar. Cut in cold butter until crumbly. Press firmly into the bottom of the pan. Bake 15 minutes until golden.
- Make the filling: In a bowl, whisk eggs, brown sugar, maple syrup, melted butter, vanilla, and salt until smooth. Stir in chopped pecans.
- Pour filling over warm crust.
- Bake 25–30 minutes, until set and lightly cracked on top.
- Cool completely before slicing—this helps them hold their shape.
