Lazy Girl Pecan Pie Bars – Easy, Gooey, and Totally Irresistible

Ingredients

For the crust:
• 1 cup all-purpose flour (or gluten-free 1:1 blend)
• ¼ cup granulated sugar
• ½ cup (1 stick) cold butter, cubed (or coconut oil)

For the filling:
• 3 large eggs
• ¾ cup brown sugar
• ¼ cup maple syrup or corn syrup
• 2 tbsp melted butter or coconut oil
• 1 tsp vanilla extract
• ¼ tsp salt
• 1 ½ cups chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper or grease well.
  2. Make the crust: In a food processor or bowl, mix flour and sugar. Cut in cold butter until crumbly. Press firmly into the bottom of the pan. Bake 15 minutes until golden.
  3. Make the filling: In a bowl, whisk eggs, brown sugar, maple syrup, melted butter, vanilla, and salt until smooth. Stir in chopped pecans.
  4. Pour filling over warm crust.
  5. Bake 25–30 minutes, until set and lightly cracked on top.
  6. Cool completely before slicing—this helps them hold their shape.

Perfect for potlucks, holidays, or when you want pie without the fuss!
