  • Pinch of salt

Instructions

1. Prep:
Preheat oven to 350°F (175°C). Grease 9″ round or 8×8″ square pan; line with parchment.
2. Blend cottage cheese:
In a blender or food processor, blend cottage cheese until completely smooth (~30 seconds). This ensures a tender crumb!
3. Mix batter:
In a large bowl, whisk almond flour, sweetener, baking powder, and salt.
Add blended cottage cheese, eggs, melted butter, lemon juice, lemon zest, and vanilla. Mix until smooth and glossy.
4. Bake:
Pour batter into prepared pan. Bake 35–40 minutes, until top is golden and toothpick comes out clean.
5. Cool & glaze (optional):
Cool in pan 10 minutes; transfer to rack.
If glazing: Whisk powdered sweetener, lemon juice, zest, and salt until smooth. Drizzle over cooled cake.
6. Serve:
Slice and top with berries and optional whipped cream.
