Base:

  • 3 cups gluten-free crispy rice cereal (you love GF—you’ll want certified GF!)
  • 1½ cups sugar-free white chocolate chips (or chopped sugar-free white chocolate—you love white chocolate!)
  • 2 tbsp coconut oil or butter
  • Zest of 2 lemons (you love citrus!)
  • 12 tsp fresh lemon juice (start with 1 tsp—you love tang!)
  • Optional: 1–2 drops natural yellow food coloring

Lemon drizzle (optional):

  • ¼ cup powdered sweetener (powdered erythritol or monk fruit blend—you love blood sugar friendly!)
  • 12 tsp fresh lemon juice
  • Extra lemon zest

Instructions

1. Melt base:

In a large pot over low heat, melt white chocolate chips and coconut oil, stirring constantly until smooth. Remove from heat.

2. Add flavor & cereal:

Stir in lemon zest, lemon juice (start with 1 tsp—add more if desired), and optional food coloring. Gently fold in crispy rice cereal until fully coated.

3. Press & set:

  1. Line an 8×8″ pan with parchment.
  2. Press mixture firmly into pan (use damp hands or spatula).
  3. Cool at room temp 15 minutes or refrigerate 10 minutes until firm.

4. Drizzle & serve:

Whisk powdered sweetener and lemon juice for drizzle; drizzle over bars. Slice into squares.
