Ingredients

• Crust: 1 ½ cups almond flour or whole wheat pastry flour, 3 tbsp browned butter or coconut oil, 2 tbsp pure maple syrup, pinch sea salt
• Filling: 4 cups fresh peaches, sliced (about 5-6 medium), ⅓ cup pure maple syrup, 2 tbsp cornstarch or arrowroot powder, 1 tsp vanilla extract, ½ tsp ground cinnamon, pinch nutmeg
• Topping: ¼ cup plain Greek yogurt + 1 tbsp maple syrup + ½ tsp vanilla for creamy drizzle
• Optional: 2 tbsp rolled oats + 1 tbsp chopped pecans for crunchy streusel


Instructions

• Preheat oven to 375°F (190°C). Line a 9-inch pie dish with parchment or lightly grease.
• For brown butter: melt butter in a small skillet over medium heat, stirring until golden and nutty (3-4 mins); cool slightly.
• Mix crust ingredients until crumbly; press firmly into pie dish and bake 8-10 mins until lightly golden.
• Toss sliced peaches with maple syrup, cornstarch, vanilla, cinnamon, and nutmeg until evenly coated and juicy.
• Pour peach filling into pre-baked crust; sprinkle with oats and pecans if using for extra texture.
• Bake 25-30 mins until filling bubbles and peaches are tender; cool 15 mins before slicing.
• Whisk Greek yogurt, maple syrup, and vanilla for a light drizzle; serve warm or chilled with this creamy finish!
