Peanut Butter Chocolate Greek Yogurt Bark (Creamy, High-Protein & Frozen Treat)

  • Author: WAFA LI

Ingredients

Scale
(Serves 6–8)

Base:

  • 2 cups plain full-fat Greek yogurt (you love high-protein!)
  • ¼ cup natural peanut butter (unsweetened, no added oil)
  • 2 tbsp pure maple syrup (or sugar-free maple syrup for blood sugar friendly)
  • 1 tsp vanilla extract
  • Pinch of salt

Chocolate layer:

  • ½ cup dark chocolate chips (70% cacao or higher)
  • 1 tsp coconut oil

Toppings (choose your favorites):

  • Crushed peanuts or almonds
  • Flaky sea salt (sweet-salty contrast—you love this!)
  • Cacao nibs
  • Hemp seeds (extra protein!)

Instructions

1. Prep yogurt base:

In a bowl, mix Greek yogurt, peanut butter, maple syrup, vanilla, and salt until smooth and creamy.

2. Spread on tray:

Line a baking sheet (9×13″ or similar) with parchment paper. Pour yogurt mixture onto sheet; spread evenly into a ½” thick layer.

3. Swirl & top:

  1. Melt chocolate chips + coconut oil in microwave (30-sec bursts, stirring between) until smooth.
  2. Drizzle melted chocolate over yogurt. Use a toothpick to gently swirl into marbled pattern.
  3. Sprinkle with toppings immediately (they stick best while chocolate is warm).

4. Freeze:

Freeze at least 3 hours or until solid.

5. Break & serve:

Lift bark out using parchment; break into rustic shards. Store in freezer.
💡 Pro Tips for Perfection:
Use full-fat Greek yogurt—low-fat = icy texture; full-fat = creamy when frozen.
Natural peanut butter only—stir well before measuring (oil separation is normal!).
