Ingredients
• 1 cup natural creamy peanut butter (no sugar added)
• ¾ cup coconut sugar or pure maple syrup
• 1 large egg or flax egg
• 1 tsp pure vanilla extract
• ½ tsp baking soda
• Pinch of sea salt
• Optional: 2 tbsp dark chocolate chips or chopped peanuts
Instructions
• Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
• In a bowl, whisk peanut butter, coconut sugar, egg, and vanilla until smooth and creamy.
• Stir in baking soda and salt until just combined; fold in chocolate chips if using.
• Scoop tablespoon-sized portions, roll into balls, and place on the baking sheet.
• Gently press each cookie with a fork in a crisscross pattern to flatten slightly.
• Bake 8-10 minutes until edges are lightly golden; cool 5 minutes on pan before transferring to a rack!
