Pecan Praline Sweet Potato Cake: Rich Southern Comfort in Every Slice

For the Cake:

  • 2 cups mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup coconut oil or melted butter
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

For the Pecan Praline Topping:

 

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, whisk together mashed sweet potatoes, sugar, brown sugar, eggs, milk, coconut oil, and vanilla.
  3. In another bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients until smooth.
  5. Pour batter into prepared pan and bake for 35–40 minutes, until set.
  6. While baking, melt butter in a saucepan over medium heat.
  7. Stir in brown sugar and cream; cook until smooth and slightly thickened.
  8. Remove from heat and add vanilla and pecans.
  9. Pour praline topping over warm cake.
  10. Let cool slightly before slicing and serving.
