For the Cake:
- 2 cups mashed sweet potatoes
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup coconut oil or melted butter
- 3 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
For the Pecan Praline Topping:
- 1/2 cup butter
- 1 cup brown sugar
- 1/4 cup heavy cream
- 1 tsp vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a bowl, whisk together mashed sweet potatoes, sugar, brown sugar, eggs, milk, coconut oil, and vanilla.
- In another bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- Combine wet and dry ingredients until smooth.
- Pour batter into prepared pan and bake for 35–40 minutes, until set.
- While baking, melt butter in a saucepan over medium heat.
- Stir in brown sugar and cream; cook until smooth and slightly thickened.
- Remove from heat and add vanilla and pecans.
- Pour praline topping over warm cake.
- Let cool slightly before slicing and serving.
