- 1 cup pumpkin puree
- 1 cup plain Greek yogurt
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- ½ tsp cinnamon
- 1 cup low-sugar granola
- 2 tbsp chopped pecans (optional)
- Whipped coconut cream, for topping (optional)
Instructions
- In a medium bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and cinnamon until smooth.
- Spoon a layer of the pumpkin mousse into serving glasses or jars.
- Add a layer of granola.
- Repeat the layers until the glasses are filled.
- Top with chopped pecans and whipped coconut cream, if desired.
- Chill for 20–30 minutes before serving for the best texture.
