  • 1 cup plain Greek yogurt
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 cup low-sugar granola
  • 2 tbsp chopped pecans (optional)
  • Whipped coconut cream, for topping (optional)

Instructions

  1. In a medium bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and cinnamon until smooth.
  2. Spoon a layer of the pumpkin mousse into serving glasses or jars.
  3. Add a layer of granola.
  4. Repeat the layers until the glasses are filled.
  5. Top with chopped pecans and whipped coconut cream, if desired.
  6. Chill for 20–30 minutes before serving for the best texture.
