Pumpkin Batter:

  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt

Topping:

 

  • 1 cup brown sugar
  • 1/2 cup chopped pecans
  • 1 1/2 cups hot water
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a bowl, mix pumpkin puree, brown sugar, milk, melted butter, and vanilla until smooth.
  3. In another bowl, whisk flour, baking powder, cinnamon, pumpkin pie spice, and salt.
  4. Combine wet and dry ingredients to form a thick batter.
  5. Spread batter evenly into the baking dish.
  6. Sprinkle brown sugar and chopped pecans over the top.
  7. Carefully pour hot water over the entire mixture (do not stir).
  8. Bake for 40–45 minutes until the top is set and golden, and sauce is bubbling underneath.
  9. Let cool for 10 minutes before serving.
