For the Cookies:

  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/3 cup coconut oil, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt

For the Pumpkin Pie Filling:

  • 4 oz cream cheese, softened
  • 1/2 cup pumpkin puree
  • 1/3 cup powdered sugar
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix pumpkin puree, brown sugar, coconut oil, egg, and vanilla until smooth.
  3. In another bowl, whisk flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  4. Combine wet and dry ingredients to form a soft dough.
  5. Scoop dough onto baking sheet and gently flatten.
  6. Bake for 10–12 minutes, until cookies are set.
  7. Let cool completely.
  8. For filling, beat cream cheese, pumpkin, powdered sugar, and spices until smooth.
  9. Spoon or pipe filling onto half the cookies and sandwich with the remaining cookies, or spread on top.
  10. Chill for 20 minutes before serving.
