For the French Toast:
- 8 slices whole grain bread
- 3 large eggs
- 1/2 cup pumpkin puree
- 3/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tbsp coconut oil, for cooking
For the Homemade Pumpkin Syrup:
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup water
- 1/2 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1 tsp vanilla extract
Instructions
- In a shallow bowl, whisk together eggs, pumpkin puree, almond milk, vanilla, cinnamon, and pumpkin pie spice.
- Dip each slice of bread into the mixture, coating both sides.
- Heat coconut oil in a skillet or griddle over medium heat.
- Cook bread slices for 3–4 minutes per side, until golden brown.
- For the syrup, combine pumpkin puree, maple syrup, water, cinnamon, pumpkin pie spice, and vanilla in a small saucepan.
- Simmer for 3–5 minutes, stirring frequently, until smooth and slightly thickened.
- Stack the French toast on serving plates.
- Drizzle generously with warm pumpkin syrup and serve immediately.
