For the French Toast:

  • 8 slices whole grain bread

  • 3/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp coconut oil, for cooking

For the Homemade Pumpkin Syrup:

  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1 tsp vanilla extract

Instructions

  1. In a shallow bowl, whisk together eggs, pumpkin puree, almond milk, vanilla, cinnamon, and pumpkin pie spice.
  2. Dip each slice of bread into the mixture, coating both sides.
  3. Heat coconut oil in a skillet or griddle over medium heat.
  4. Cook bread slices for 3–4 minutes per side, until golden brown.
  5. For the syrup, combine pumpkin puree, maple syrup, water, cinnamon, pumpkin pie spice, and vanilla in a small saucepan.
  6. Simmer for 3–5 minutes, stirring frequently, until smooth and slightly thickened.
  7. Stack the French toast on serving plates.
  8. Drizzle generously with warm pumpkin syrup and serve immediately.
