- 2 cups 100% mixed berry or strawberry juice
- 2 tbsp fresh lemon juice
- 2 tbsp maple syrup
- 4 tbsp unflavored gelatin
- ½ cup fresh strawberries, finely diced
- ¼ cup blueberries
- Fresh mint leaves for garnish (optional)
Instructions
- Pour ½ cup of the fruit juice into a small bowl and sprinkle the gelatin over the top. Let it bloom for 5 minutes.
- Heat the remaining fruit juice in a saucepan over medium-low heat.
- Stir in the maple syrup and lemon juice.
- Add the bloomed gelatin and whisk until completely dissolved. Do not boil.
- Remove from the heat and fold in the diced strawberries and blueberries.
- Pour the mixture into silicone molds or an 8×8-inch dish.
- Refrigerate for at least 2–3 hours, or until fully set.
- Cut into squares or remove from molds and garnish with fresh mint if desired.
- Serve chilled.
