Radiant Glow Jello Treats: Colorful, Fun, and Refreshingly Delicious

Ingredients

  • 2 cups 100% mixed berry or strawberry juice
  • 2 tbsp fresh lemon juice
  • 2 tbsp maple syrup
  • 4 tbsp unflavored gelatin
  • ½ cup fresh strawberries, finely diced
  • ¼ cup blueberries
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Pour ½ cup of the fruit juice into a small bowl and sprinkle the gelatin over the top. Let it bloom for 5 minutes.
  2. Heat the remaining fruit juice in a saucepan over medium-low heat.
  3. Stir in the maple syrup and lemon juice.
  4. Add the bloomed gelatin and whisk until completely dissolved. Do not boil.
  5. Remove from the heat and fold in the diced strawberries and blueberries.
  6. Pour the mixture into silicone molds or an 8×8-inch dish.
  7. Refrigerate for at least 2–3 hours, or until fully set.
  8. Cut into squares or remove from molds and garnish with fresh mint if desired.
  9. Serve chilled.
