  • 2 tbsp almond milk
  • 1 cup light cream cheese, softened
  • ¼ cup Greek yogurt
  • 2 tbsp maple syrup
  • 10 Oreo cookies, crushed
  • ½ cup whipped coconut cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk flour, cocoa powder, baking powder, and salt in a bowl.
  3. In another bowl, mix eggs, maple syrup, coconut oil, vanilla, and almond milk.
  4. Combine wet and dry ingredients until smooth.
  5. Spread batter evenly on baking sheet and bake for 10–12 minutes.
  6. Turn cake onto parchment, roll gently, and let cool.
  7. Mix cream cheese, Greek yogurt, and maple syrup until creamy.
  8. Fold in crushed Oreos.
  9. Unroll cake, spread filling evenly, then re-roll tightly.
  10. Chill for 1 hour, slice, and serve.
