- ¾ cup whole wheat flour
- 2 tbsp cocoa powder
- ½ tsp baking powder
- ¼ tsp salt
- 3 large eggs
- ⅓ cup maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 2 tbsp almond milk
- 1 cup light cream cheese, softened
- ¼ cup Greek yogurt
- 2 tbsp maple syrup
- 10 Oreo cookies, crushed
- ½ cup whipped coconut cream (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk flour, cocoa powder, baking powder, and salt in a bowl.
- In another bowl, mix eggs, maple syrup, coconut oil, vanilla, and almond milk.
- Combine wet and dry ingredients until smooth.
- Spread batter evenly on baking sheet and bake for 10–12 minutes.
- Turn cake onto parchment, roll gently, and let cool.
- Mix cream cheese, Greek yogurt, and maple syrup until creamy.
- Fold in crushed Oreos.
- Unroll cake, spread filling evenly, then re-roll tightly.
- Chill for 1 hour, slice, and serve.
