Rolled S’Mores Rice Krispie Treats: The Ultimate No-Bake Dessert

Ingredients

• 4 cups whole-grain crispy rice cereal
• 10 oz mini marshmallows, divided (use vegan if preferred)
• 2 tablespoons butter or coconut oil
• ¼ cup graham cracker crumbs (or gluten-free alternative)
• ⅓ cup dark chocolate chips (70% cacao)
• 1 teaspoon pure vanilla extract
• Pinch of sea salt


Instructions

• Lightly grease hands and a large sheet of parchment paper.
• In a large pot, melt butter and 8 oz marshmallows over low heat, stirring until smooth.
• Remove from heat; stir in vanilla, then gently fold in rice cereal and graham crumbs until evenly coated.
• While still warm, scoop portions, flatten slightly, add a few chocolate chips and remaining marshmallows, then roll into logs.
• Let set 10 minutes, sprinkle with sea salt, then slice or enjoy whole.
