Salted Caramel Ritz Cracker Cookies: Sweet, Salty, Crunchy Perfection

Ingredients

  • 48 Ritz crackers
  • 1 cup natural caramel sauce (or sugar-free caramel sauce)
  • 1½ cups dark chocolate chips
  • 1 tsp coconut oil
  • ½ tsp flaky sea salt
  • 2 tbsp chopped roasted pecans (optional)

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. Spread about 1 teaspoon of caramel sauce onto 24 Ritz crackers.
  3. Top each with another cracker to create sandwiches.
  4. Freeze the cracker sandwiches for 15 minutes to firm up.
  5. Melt the dark chocolate chips with the coconut oil until smooth.
  6. Dip each cracker sandwich into the melted chocolate, coating completely.
  7. Place on the prepared tray and immediately sprinkle with flaky sea salt and chopped pecans, if using.
  8. Refrigerate for 20–30 minutes, or until the chocolate is set.
  9. Serve chilled or at room temperature.
