Instructions

1. Make strawberry purée:
In a blender, combine strawberries, 2 tbsp sweetener, and lemon juice. Blend until smooth. Strain through fine-mesh sieve to remove seeds (optional but recommended for silkiness). Chill 10 minutes.
2. Whip cream:
In a large bowl, beat cold heavy cream, 2 tbsp sweetener, and vanilla until stiff peaks form (~3–4 min).
3. Fold together:
Gently fold chilled strawberry purée into whipped cream in 2–3 additions until evenly swirled (or fully blended for uniform pink).
4. Chill & serve:
Divide into glasses or bowls. Refrigerate at least 2 hours (or up to 24 hours) to set. Garnish before serving.
