For the Pie:

- 3/4 cup brown sugar

- 1/2 cup evaporated milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt

Instructions
- Preheat oven to 350Β°F (175Β°C).
- Place the pie crust into a 9-inch pie plate and crimp the edges as desired.
- In a large mixing bowl, whisk together mashed sweet potatoes, melted butter, brown sugar, and granulated sugar.
- Beat in eggs, evaporated milk, and vanilla extract until smooth.
- Add cinnamon, nutmeg, ginger, and salt. Mix well.
- Pour the filling into the prepared pie crust.
- Bake for 50β60 minutes, or until the center is set and a knife inserted near the center comes out clean.
- Cool completely on a wire rack.
- Chill for at least 2 hours before serving for the best texture.
- Top with whipped cream and pecans if desired.
