  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Optional Topping:

  • Chopped pecans
  • Cinnamon dusting

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. Place the pie crust into a 9-inch pie plate and crimp the edges as desired.
  3. In a large mixing bowl, whisk together mashed sweet potatoes, melted butter, brown sugar, and granulated sugar.
  4. Beat in eggs, evaporated milk, and vanilla extract until smooth.
  5. Add cinnamon, nutmeg, ginger, and salt. Mix well.
  6. Pour the filling into the prepared pie crust.
  7. Bake for 50–60 minutes, or until the center is set and a knife inserted near the center comes out clean.
  8. Cool completely on a wire rack.
  9. Chill for at least 2 hours before serving for the best texture.
  10. Top with whipped cream and pecans if desired.
