Sweetened Condensed Milk Snowball Cookies: Buttery, Melt-in-Your-Mouth Holiday Treats

  • 2 cups whole wheat pastry flour
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ½ cup unsalted butter, softened
  • ⅓ cup sweetened condensed milk
  • 1 tsp vanilla extract
  • ½ cup finely chopped pecans or walnuts
  • ¼ cup powdered monk fruit sweetener (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter until light and creamy.
  4. Mix in the sweetened condensed milk and vanilla extract until smooth.
  5. Gradually add the dry ingredients, mixing just until combined.
  6. Fold in the chopped pecans or walnuts.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  8. Bake for 12–15 minutes, or until the bottoms are lightly golden.
  9. Let the cookies cool for 5 minutes, then roll them in the powdered monk fruit sweetener while still slightly warm. Roll again once completely cooled for a snowy finish.
