- 2 cups whole wheat pastry flour
- ½ tsp baking powder
- ¼ tsp sea salt
- ½ cup unsalted butter, softened
- ⅓ cup sweetened condensed milk
- 1 tsp vanilla extract
- ½ cup finely chopped pecans or walnuts
- ¼ cup powdered monk fruit sweetener (for coating)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter until light and creamy.
- Mix in the sweetened condensed milk and vanilla extract until smooth.
- Gradually add the dry ingredients, mixing just until combined.
- Fold in the chopped pecans or walnuts.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet.
- Bake for 12–15 minutes, or until the bottoms are lightly golden.
- Let the cookies cool for 5 minutes, then roll them in the powdered monk fruit sweetener while still slightly warm. Roll again once completely cooled for a snowy finish.
