Instructions

1. Make crust:

  1. Mix graham crumbs, melted butter, and sweetener until sandy.
  2. Press firmly into bottom and up sides of 9″ pie dish.
  3. Refrigerate while making filling.

Slice 3 cups strawberries; leave 1 cup whole for topping.

3. Make glaze:

  1. In saucepan, whisk sweetener, cornstarch, and water.
  2. Bring to simmer over medium heat; cook 2–3 minutes until thick and clear.
  3. Remove from heat; stir in lemon juice and vanilla (if using).

4. Assemble pie:

  1. Gently fold sliced strawberries into warm glaze.
  2. Pour into chilled crust; arrange whole strawberries on top.
  3. Refrigerate at least 2 hours until set.

5. Serve:
