The Pioneer Woman’s Blackberry Cobbler (Inspired): Juicy, Buttery, and Old-Fashioned Comfort Dessert

Ingredients

• 4 cups fresh or frozen blackberries
• ¼ cup pure maple syrup or honey
• 1 tbsp fresh lemon juice
• 1 tsp vanilla extract
• ¾ cup whole wheat pastry flour or almond flour blend
• ¼ cup rolled oats
• ⅓ cup pure maple syrup or coconut sugar
• ½ tsp baking powder
• ½ tsp ground cinnamon, pinch of nutmeg
• 3 tbsp cold light butter or coconut oil, cubed
• ¼ cup plain Greek yogurt
• Pinch of sea salt


Instructions

• Preheat oven to 375°F (190°C). Lightly grease an 8×8 baking dish.
• In a bowl, gently toss blackberries with ¼ cup maple syrup, lemon juice, and vanilla; pour into prepared dish.
• In another bowl, whisk flour, oats, sweetener, baking powder, cinnamon, nutmeg, and salt.
• Cut in cold butter until mixture resembles coarse crumbs; stir in Greek yogurt until a soft dough forms.
• Drop spoonfuls of topping evenly over berries—don’t over-smooth for that rustic cobbler charm!
• Bake 30-35 mins until filling bubbles and topping is golden; cool 10 mins and serve warm with a dollop of Greek yogurt!
