Crust:

  • Classic version:
    • 1½ cups graham cracker crumbs
    • 6 tbsp melted butter
    • 2 tbsp granulated sugar
  • Blood sugar friendly / keto version:
    • 1½ cups almond flour
    • 3 tbsp melted butter
    • 2 tbsp granulated monk fruit blend
    • Pinch of salt

Key lime curd layer:

  • 1 (14 oz) can sweetened condensed milk (or sugar-free condensed milk for blood sugar friendly)
  • ¾ cup fresh key lime juice (or regular lime juice—you love citrus!)
  • Zest of 2 limes
  • 1 (8 oz) block full-fat cream cheese, softened (you love cream cheese!)

Whipped cream topping:

  • 1½ cups heavy cream, cold
  • 3 tbsp powdered sweetener (powdered erythritol or monk fruit blend)
  • 1 tsp vanilla extract

Garnish:

  • Thin lime slices
  • Extra lime zest
  • Toasted coconut flakes (you love coconut!)

Instructions

1. Make crust:

  1. Mix crust ingredients until crumbly.
  2. Press firmly into bottom and up sides of a 9″ pie dish.
  3. Classic: Bake at 350°F (175°C) for 8–10 minutes; cool completely.
    Keto: Freeze 10 minutes (no bake needed).

2. Make key lime curd:

Beat cream cheese until smooth. Add sweetened condensed milk, lime juice, and zest; beat until thick and glossy (~2 min). Pour into cooled crust; smooth top.

3. Make whipped cream:

Whip heavy cream, powdered sweetener, and vanilla to stiff peaks. Spread evenly over lime layer.

4. Chill & serve:

Refrigerate at least 4 hours (overnight best for firm set). Garnish with lime slices, zest, and coconut before serving.
