Crust:
- Classic version:
- 1½ cups graham cracker crumbs
- 6 tbsp melted butter
- 2 tbsp granulated sugar

- 1½ cups almond flour
- 3 tbsp melted butter
- 2 tbsp granulated monk fruit blend
- Pinch of salt
Key lime curd layer:
- 1 (14 oz) can sweetened condensed milk (or sugar-free condensed milk for blood sugar friendly)
- ¾ cup fresh key lime juice (or regular lime juice—you love citrus!)
- Zest of 2 limes
- 1 (8 oz) block full-fat cream cheese, softened (you love cream cheese!)
Whipped cream topping:
- 1½ cups heavy cream, cold
- 3 tbsp powdered sweetener (powdered erythritol or monk fruit blend)
- 1 tsp vanilla extract
Garnish:
- Thin lime slices
- Extra lime zest
- Toasted coconut flakes (you love coconut!)
Instructions
1. Make crust:
- Mix crust ingredients until crumbly.
- Press firmly into bottom and up sides of a 9″ pie dish.
- Classic: Bake at 350°F (175°C) for 8–10 minutes; cool completely.
Keto: Freeze 10 minutes (no bake needed).
2. Make key lime curd:
Beat cream cheese until smooth. Add sweetened condensed milk, lime juice, and zest; beat until thick and glossy (~2 min). Pour into cooled crust; smooth top.
3. Make whipped cream:
Whip heavy cream, powdered sweetener, and vanilla to stiff peaks. Spread evenly over lime layer.
4. Chill & serve:
Refrigerate at least 4 hours (overnight best for firm set). Garnish with lime slices, zest, and coconut before serving.
