Wholesome Applesauce Cake: A Soft, Moist, Naturally Sweetened Comfort Cake

  • 1½ cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • ¼ cup unsweetened almond milk
  • ¼ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch cake pan.
  2. In a bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix eggs, applesauce, maple syrup, coconut oil, vanilla, and almond milk.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in walnuts if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 30–35 minutes, or until a toothpick comes out clean.
  8. Cool before slicing and serving.
