For the Layers:

  • 12 whole grain graham crackers
  • 8 oz light cream cheese, softened
  • 1 cup plain Greek yogurt
  • 1 package (3.4 oz) sugar-free instant lemon pudding mix
  • 1½ cups unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon zest

Lemon Glaze:

  • ½ cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract

Instructions

  1. In a large bowl, beat the cream cheese until smooth.
  2. Add the Greek yogurt, lemon pudding mix, almond milk, maple syrup, vanilla, and lemon zest. Mix until thick and creamy.
  3. Arrange a layer of graham crackers in the bottom of an 8×8-inch baking dish.
  4. Spread half of the lemon filling over the crackers.
  5. Repeat with another layer of graham crackers and the remaining filling.
  6. Finish with a final layer of graham crackers.
  7. Whisk together the glaze ingredients and spread evenly over the top.
  8. Cover and refrigerate for at least 6 hours, or overnight, until the crackers soften.
  9. Slice and serve chilled.
