For the Layers:
- 12 whole grain graham crackers
- 8 oz light cream cheese, softened
- 1 cup plain Greek yogurt
- 1 package (3.4 oz) sugar-free instant lemon pudding mix
- 1½ cups unsweetened almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp fresh lemon zest
Lemon Glaze:
- ½ cup plain Greek yogurt
- 2 tbsp fresh lemon juice
- 1 tbsp maple syrup
- ½ tsp vanilla extract
Instructions
- In a large bowl, beat the cream cheese until smooth.
- Add the Greek yogurt, lemon pudding mix, almond milk, maple syrup, vanilla, and lemon zest. Mix until thick and creamy.
- Arrange a layer of graham crackers in the bottom of an 8×8-inch baking dish.
- Spread half of the lemon filling over the crackers.
- Repeat with another layer of graham crackers and the remaining filling.
- Finish with a final layer of graham crackers.
- Whisk together the glaze ingredients and spread evenly over the top.
- Cover and refrigerate for at least 6 hours, or overnight, until the crackers soften.
- Slice and serve chilled.
