  • 2 cups whole wheat pastry flour
  • 1 tbsp baking powder
  • Β½ tsp baking soda
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Β½ tsp sea salt
  • ΒΌ tsp black pepper
  • 1Β½ cups shredded sharp cheddar cheese
  • 2 tbsp chopped fresh chives
  • 2 large eggs
  • 1 cup buttermilk
  • ΒΌ cup melted butter
  • 1 tbsp olive oil

Optional Topping:

  • 2 tbsp shredded cheddar cheese
  • 1 tsp chopped fresh chives

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Grease or line a 9Γ—5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, salt, and black pepper.
  3. Stir in the shredded cheddar cheese and chopped chives.
  4. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and olive oil until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir just until no dry flour remains. Do not overmix.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Sprinkle the additional cheddar cheese and chives over the batter, if desired.
  8. Bake for 45–55 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve warm.
