- 2 cups whole wheat pastry flour
- 1 tbsp baking powder
- Β½ tsp baking soda
- 1 tsp garlic powder
- 1 tsp onion powder
- Β½ tsp sea salt
- ΒΌ tsp black pepper
- 1Β½ cups shredded sharp cheddar cheese
- 2 tbsp chopped fresh chives
- 2 large eggs
- 1 cup buttermilk
- ΒΌ cup melted butter
- 1 tbsp olive oil
Optional Topping:
- 2 tbsp shredded cheddar cheese
- 1 tsp chopped fresh chives
Instructions
- Preheat the oven to 350Β°F (175Β°C). Grease or line a 9Γ5-inch loaf pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, salt, and black pepper.
- Stir in the shredded cheddar cheese and chopped chives.
- In a separate bowl, whisk together the eggs, buttermilk, melted butter, and olive oil until well combined.
- Pour the wet ingredients into the dry ingredients and stir just until no dry flour remains. Do not overmix.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Sprinkle the additional cheddar cheese and chives over the batter, if desired.
- Bake for 45β55 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve warm.
