🧀🥩 Cheesy Stuffed Meatloaf Bites: Bite-Sized Comfort Food Bursting with Melted Cheese

  • lbs lean ground beef (90% lean)
  • 1 cup whole wheat breadcrumbs
  • 1 large egg
  • ¼ cup plain Greek yogurt
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 4 oz sharp cheddar cheese, cut into 20 small cubes
  • 2 tbsp chopped fresh parsley

Glaze:

  • ¼ cup ketchup
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a mini muffin pan or line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, Greek yogurt, ketchup, Worcestershire sauce, garlic, onion powder, Italian seasoning, smoked paprika, salt, and black pepper. Mix gently until just combined.
  3. Scoop about 2 tablespoons of the meat mixture and flatten it slightly in your hand.
  4. Place one cube of cheddar cheese in the center and wrap the meat around it, sealing completely.
  5. Arrange the meatloaf bites in the prepared pan or on the baking sheet.
  6. In a small bowl, whisk together the ketchup, maple syrup, and Dijon mustard. Brush the glaze over each meatloaf bite.
  7. Bake for 18–22 minutes, or until the meat reaches an internal temperature of 160°F (71°C).
  8. Let rest for 5 minutes before serving.
  9. Garnish with chopped fresh parsley and enjoy warm.
