- 1½ lbs lean ground beef (90% lean)
- 1 cup whole wheat breadcrumbs
- 1 large egg
- ¼ cup plain Greek yogurt
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- 4 oz sharp cheddar cheese, cut into 20 small cubes
- 2 tbsp chopped fresh parsley
Glaze:
- ¼ cup ketchup
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a mini muffin pan or line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, egg, Greek yogurt, ketchup, Worcestershire sauce, garlic, onion powder, Italian seasoning, smoked paprika, salt, and black pepper. Mix gently until just combined.
- Scoop about 2 tablespoons of the meat mixture and flatten it slightly in your hand.
- Place one cube of cheddar cheese in the center and wrap the meat around it, sealing completely.
- Arrange the meatloaf bites in the prepared pan or on the baking sheet.
- In a small bowl, whisk together the ketchup, maple syrup, and Dijon mustard. Brush the glaze over each meatloaf bite.
- Bake for 18–22 minutes, or until the meat reaches an internal temperature of 160°F (71°C).
- Let rest for 5 minutes before serving.
- Garnish with chopped fresh parsley and enjoy warm.
